Springtime Frittata

The peppery taste of cilantro complements the eggs, ham, and Gruyere cheese perfectly in this seasonal favourite.

All You Need

  • 1 tbsp (15 mL) olive oil
  • 1 small onion, chopped
  • 1 medium zucchini, halved lengthwise and cut into 1/4-in (0.5 cm) thick slices
  • 1 cup (250 mL) diced ham
  • 6 eggs
  • 2 tsps (10 mL) McCormick Gourmet Cilantro Leaves
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) McCormick Gourmet Coarse Grind Black Pepper
  • 3/4 cup (175 mL) grated Gruyere cheese

Instructions

  1. Heat oil in large ovenproof nonstick skillet on medium heat. Add onion and zucchini; cook and stir 2 minutes. Reduce heat to medium-low. Add ham; cook 2 minutes

  2. Beat eggs, cilantro, salt and pepper in medium bowl. Pour into skillet. Cook without stirring 5 minutes or until eggs are set on bottom. Sprinkle with cheese

  3. Broil 4 to 5 minutes until eggs are set and cheese is lightly browned
