Strawberry Breakfast Loaf

This strawberry loaf is hearty and delicious! Warm it up, or eat it cool- your kids will love this for breakfast!

All You Need

  • 2 cups (500 mL) all-purpose flour
  • 1/2 tsp (2 mL) sea salt
  • 1 1/2 tsp (7 mL) baking powder
  • 2 large bananas, mashed
  • 1 tsp (5 mL) Club House Pure Vanilla Extract
  • 1/2 cup (125 mL) Billy Bee Honey
  • 1/2 cup (125 mL) plain Greek yogurt
  • 1 cup (250 mL) sliced strawberries

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a loaf pan with coconut oil or olive oil.

  2. Add all ingredients to a medium sized bowl, mix until combined.

  3. Bake for about 1 hour 15 minutes, checking at 1 hour. The loaf is ready when a toothpick inserted in the centre comes out clean.

  4. Let it cool at least 15 minutes before slicing, then store in the fridge for maximum freshness.

  5. Enjoy cool, or heated with a bit of butter!

  6. Tips: Extracts are a staple in many baking recipes, but switching up the extract allows a recipe to take on a new flavour! Feel free to try Club House Pure Lemon or Almond extract! This recipe can be made gluten-free quite easily. Using the appropriate substitute ratio and additional ingredients, Club House Rice Flour is a great alternative to regular flour, creating a treat that everyone can enjoy.
