Sriracha Lime Stir-Fry with Coconut Milk

All You Need

  • 1 tbsp (15 mL) vegetable oil
  • 1 lb (500 g) boneless, skinless chicken
  • 4 tsp (20 mL) Club House Sriracha with Lime Signature Seasoning
  • 1 cup (250 mL) each chopped zucchini, bell pepper and red onion
  • 1 can (400 mL) Thai Kitchen Coconut Milk
  • 1/2 cup (125 mL) diced tomato

Instructions

  1. Heat oil in a large skillet on medium-high heat. Add chicken and seasoning; sauté 3 minutes.

  2. Add vegetables, except tomato; sauté 4 minutes. Add coconut milk, bring to boil and simmer 4 minutes or until desired consistency is reached. Add tomato; simmer 1 minute.

  3. Serve over rice or noodles, if desired.
