Piri Piri Sweet Potato Stack

This elegant side dish can elevate any meal from the humble fried chicken to filet mignon by simply stacking sliced potatoes.

All You Need

  • 2 tbsp (30 mL) olive oil or melted coconut oil
  • 2 sweet potatoes, washed and dried
  • 2 tsp (10 mL) Club House Piri Piri Signature Blend
  • 1/2 tsp (2 mL) Club House Parsley Grinder or Basil Grinder
  • 1/4 tsp (1 mL) Club House Sea Salt Grinder
  • 1/2 cup (125 mL) finely grated Parmesan cheese


  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment paper and set aside.

  2. Slice off end of potato. Using kitchen mandolin, cut potato into ¼-inch (5 mm) thick slices.

  3. Combine potato slices and oil in a bowl; toss to coat. Sprinkle with piri piri seasoning, parsley and salt, tossing to coat evenly. Layer potatoes on prepared sheet, in stacks 8-10 slices high, starting with widest slices and gradually ending with smallest pieces, sprinkling with cheese every two slices.

  4. Bake 35 minutes, until edges are golden and crisp and a paring knife inserts easily into centre.

  5. Kitchen Tip: For consistent, even slices and baking results, use a kitchen mandolin.

  6. Kitchen Tip: Check stacks during baking, and prop up straight if sliding.

  7. Kitchen Tip: Best served warm, re-heat in oven for 10 minutes just before serving.

  8. Kitchen Tip: Garnish with fresh thyme leaves and shaved Parmesan.
