Mediterranean Tofu Scramble

All You Need
- 1 tbsp (15 mL) olive oil
- 1 small onion, diced
- 1 medium red pepper, diced
- 1 pkg (350 g) extra-firm tofu
- 3 tbsp (45 mL) nutritional yeast
- 1/4 tsp (1 mL) Club House Ground Turmeric
- 3 tbsp (45 mL) Club House Signature Blends Savoury Mediterranean with Flax Seasoning
Heat oil in large skillet. Add onion and red pepper; sauté until pepper are soft and onions are almost translucent, 3-5 minutes.
Drain tofu and gently press with tea towel to remove any excess liquid. Break up into small pieces with a fork, until tofu resembles scrambled eggs. Add pan with vegetables. Stir in nutritional yeast, turmeric and Mediterranean seasoning. Sauté until tofu is just starting to brown, about 5 minutes.
