All You Need
- 3 tbsp (45 mL) Club House Cajun Signature Blend
- 1 lb (500 g) boneless, skinless chicken breast
- 1/2 cup (125 mL) ¼ in (0.5 cm) diced mango
- 1/4 cup (50 mL) each ¼ in (0.5 cm) diced red onion and green pepper
- 1/4 tsp (1 mL) Club House Ground Black Pepper
- 1 tsp (5 mL) chopped fresh cilantro
- juice of ½ lime
Rub chicken breast with seasoning. Place in preheated oven-proof skillet over medium-high heat without oil. Brown 2 minutes per side. Bake in preheated 400°F (200°C) oven 7 minutes or until internal temperature reaches 165°F (74°C). Remove from oven.
In medium bowl, combine remaining ingredients.
Slice chicken and serve with mango relish
