Ultimate Leftover Turkey Dip Sandwich

All You Need
- 1 cup (250 mL) fresh cranberries
- 1 cup (250 mL) orange juice
- 1 tbsp (15 mL) orange zest
- 1 tbsp (15 mL) brown sugar
- 3 tbsp (45 mL) maple syrup
- 2 tbsp (30 mL) vegetable oil
- 1 Spanish onion, sliced
- 1 tbsp (15 mL) butter
- 2 cups (500 mL) leftover stuffing
- 2 eggs
- 1 pkg (25 g) Club House Turkey Gravy Mix
- 1 cup (250 mL) water
- 1/2 cup (125 mL) shaved leftover turkey
Place cranberries and orange juice in medium saucepan; bring to a boil over medium heat. Add zest, brown sugar and maple syrup; cook 20-30 minutes or until sauce has caramelized and thickened.
Meanwhile, heat oil in skillet over high heat. Add onion and sauté 5 minutes, or until tender but not overly soft.
For the stuffing waffle bun, preheat waffle iron and grease with butter to prevent sticking. Combine stuffing and eggs in a bowl and mix by hand until stuffing has absorbed egg. Spoon mixture onto waffle iron evenly and close lid. Cook 8 minutes or until waffle is crispy and golden brown.
While waffle cooks, whisk together gravy mix and water in a small saucepan. Bring to a boil over high heat; simmer 1 minute or until slightly thickened.
To assemble sandwich, cut waffle in half. Layer turkey, onions, and cranberry sauce, and top with remaining waffle half. Cut sandwich in half and serve with gravy for dipping
