Twice-Baked Piri Piri Potato

All You Need

  • 4 medium baking potatoes
  • 5 tbsp (75 mL) Club House Piri Piri Signature Blend, divided
  • 1 tbsp (15 mL) vegetable oil
  • 1/2 cup (125 mL) hot milk
  • 3 tbsp (45 mL) butter
  • 1/2 cup (125 mL) shredded cheddar cheese

Instructions

  1. Rub potatoes with oil and 1 tbsp (15 mL) seasoning. Bake at 400°F (200°C) for 45 minutes or until tender.

  2. Cut hot potatoes in half lengthwise. Scoop out flesh and place in bowl. Mash with remaining ingredients except cheese until light and fluffy.

  3. Divide hot potato mixture among 8 potato halves. Sprinkle each with 1 tbsp (15 mL) cheese.

  4. Return to oven for 15 minutes or until cheese is golden
