Tuscan Frittata

All You Need

  • 2 tbsp (30 mL) vegetable oil
  • 1/2 cup (125 mL) each sliced mushrooms and red onion
  • 1/2 cup (125 mL) each diced tomato and green bell pepper
  • 2 tbsp (30 mL) Club House Italiano Signature Blend
  • 8 large eggs, beaten

Instructions

  1. In medium oven proof skillet over medium-high heat, add oil and vegetables. Sauté 2 minutes.

  2. Stir in seasoning and eggs.

  3. Bake at 375°F (190°C) for 20 minutes or until eggs are fully cooked, internal temperature reaches 165°F (74°C).

  4. Cut into 6 portions and serve.
