All You Need
- 1/3 cup (82 1/2 mL) olive oil
- 1/3 cup (82 1/2 mL) Club House Greek Signature Blend
- 3 tbsp (45 mL) lemon juice
- 1 seedless cucumber, unpeeled
- 4 medium tomatoes, seeded
- 1 cup (250 mL) kalamata (Greek) olives
- 1 small red onion, thinly sliced
- 1 cup (250 mL) feta cheese, crumbled
Dressing: Combine oil, Club House Greek Signature Blend and lemon juice. Let stand while preparing salad.
Salad: Cut cucumber and tomatoes into chunks. Toss in large bowl with olives, onion and dressing. Mix well. Add feta; toss lightly just to blend.
Tip: Feta can be sprinkled on top of salad rather than mixed in.
