Spicy Pork Sausage and Pepper Penne

All You Need

  • 1 lb (500 g) fresh sausage (sweet Italian or breakfast), cut into 1 inch (2.5 cm) chunks
  • 1 each small onion and bell pepper, thinly sliced
  • 1/8 tsp (5/8 mL) Club House Crushed Red Pepper
  • 1 cup (250 mL) low sodium garden vegetable cocktail
  • 1/2 cup (125 mL) water
  • 1 pkg (24 g) Club House 25% Less Salt Gravy Mix for Pork
  • 2 cups (500 mL) dry penne pasta, cooked according to package directions

Instructions

  1. In large skillet, brown sausage, over medium heat, for 6 minutes or until no longer pink, stirring frequently. Drain off fat.

  2. Increase heat to medium-high. Add onion, bell pepper and crushed red pepper.

  3. Stir-fry 3 – 4 minutes or until vegetables are tender-crisp.

  4. Stir in garden vegetable cocktail, water and gravy mix. Bring to a boil.

  5. Simmer 3 minutes.

  6. Serve over penne pasta.

  8. - Use 1/3 each of red, green and yellow bell peppers
