Spicy Cajun Black Beans & Rice with Sausage

This spicy weeknight dinner uses pantry staples and gets dinner on the table in less than 30 minutes!

All You Need

  • 2 tbsp (30 mL) vegetable oil
  • 1/2 cup (125 mL) pork sausage (casing removed)
  • 1/2 cup (125 mL) each diced onion, celery, red and green bell peppers
  • 3 tbsp (45 mL) Club House Cajun Signature Blend
  • 1 can (19 oz/ 540 mL) black beans, drained and rinsed
  • 1 1/2 cups (375 mL) water
  • 1 cup (250 mL) basmati rice

Instructions

  1. In large skillet, over medium-high heat, add oil, vegetables and sausage. Sauté 2 minutes.

  2. Stir in remaining ingredients.

  3. Bring to a boil; reduce heat to low. Simmer 15 to 20 minutes or until rice is tender.
