Slow Cooker Hot and Sour Soup

All You Need

  • 1/2 lb (250 g) sliced pork tenderloin
  • 2 cups (500 mL) each sliced mushrooms and julienne carrots
  • 1/2 lb (250 g) sliced pork tenderloin
  • 2 cups (500 mL) each sliced mushrooms and julienne carrots
  • 2 cans (199 mL each) bamboo shoots
  • 1 cup (250 mL) rice vinegar
  • 4 cups (1000 mL) Kitchen Basics No Salt Added Chicken Cooking Stock
  • 2 cups (500 mL) water, divided
  • 1 pkg (42 g) Slow Cookers Sweet & Sour Chicken Seasoning Mix
  • 4 tbsp (60 mL) Corn Starch
  • 1 cup (250 mL) diced extra firm tofu
  • 2 tbsp (30 mL) hot sauce

Instructions

  1. Place meat and vegetables in slow cooker. In large bowl, combine vinegar, stock, 1 ½ cups (375 mL) water and seasoning; add to slow cooker and stir.

  2. Cover. Cook 7.5 hours on low or 3.5 hours on high.

  3. Mix corn starch with ½ cup (125 mL) reserved water. Add corn starch, tofu and hot sauce to slow cooker. Cook 30 minutes more.
