Roasted Vegetable Medley

All You Need

  • 1/4 cup (62 1/2 mL) Club House Garlic Plus Signature Blend
  • 2 tbsp (30 mL) olive oil
  • 2 tbsp (30 mL) white balsamic vinegar
  • 12 oz (340 g) fresh green beans, trimmed
  • 1 large onion, cut into thin strips
  • 1 small sweet red pepper, cut into strips
  • 1 small sweet yellow pepper, cut into strips
  • 1/2 cup (125 mL) shredded mozzarella cheese (optional)

Instructions

  1. Combine Club House Garlic Plus Signature Blend, olive oil and vinegar. Put beans, onion and peppers in large roasting pan. Add dressing, tossing to coat vegetables with dressing. Bake in preheated oven at 400°F (200°C) for 25 minutes, stirring halfway through, until tender-crisp. If desired, sprinkle each serving with mozzarella cheese.

  3. · White balsamic vinegar can be replaced by regular balsamic or any of your other favourite vinegars

  4. · Replace beans with asparagus
