Roasted Garlic & Pepper Egg Salad Sandwich

All You Need

  • 6 hard cooked large eggs, coarsely chopped
  • 2 tbsp (30 mL) Club House Roasted Garlic & Peppers Signature Blend
  • 2 tsps (10 mL) finely chopped chives
  • 1/4 cup (50 mL) diced roasted peppers
  • 1 tsp (5 mL) balsamic vinegar
  • 1/2 cup (125 mL) mayonnaise
  • 8 lettuce leaves
  • 4 medium croissants, sliced

Instructions

  1. Combine eggs, seasoning, chives, roasted peppers, vinegar and mayonnaise.

  2. Let stand 20 minutes

  3. Open croissant and place two lettuce leaves inside. Divide egg mixture equally among croissants. Close and serve immediately.
