Red Velvet Pancakes

All You Need

  • 2 cups (500 mL) pancake mix
  • 2 tbsp (30 mL) unsweetened cocoa powder
  • 2 tbsp (30 mL) granulated sugar
  • 1 cup (250 mL) buttermilk
  • 2 eggs, lightly beaten
  • 1 tbsp (15 mL) Club House Pure Vanilla Extract
  • 1 1/2 tsps (7 mL) Club House Red Food Colour
  • Recipe for Cream Cheese Topping
  • 1/2 package (125 g) cream cheese, softened
  • 1/2 cup (125 mL) icing sugar
  • 1 tbsp (15 mL) milk
  • 1 tsp (5 mL) Club House Pure Vanilla Extract
  • Recipe for Spiced Syrup
  • 1 cup (250 mL) pancake syrup
  • 1 tsp (5 mL) Club House Pure Vanilla Extract
  • 1/4 tsp (1 1/4 mL) Club House Ground Cinnamon

Instructions

  1. Mix pancake mix, cocoa powder and granulated sugar in large bowl until well blended. Stir in buttermilk, eggs, vanilla and food colour just until blended.

  2. Pour ¼ cup (50 mL) of batter per pancake into preheated lightly greased griddle or skillet. Cook 1-2 minutes per side or until golden brown, turning when pancakes begin to bubble. Serve pancakes with cream cheese topping or spiced syrup, if desired.

  3. For the cream cheese topping, mix cream cheese and icing sugar in small bowl until well blended. Stir in milk, a little at a time, until smooth. Stir in vanilla.

  4. For the spiced syrup, mix pancake syrup, vanilla and cinnamon or pumpkin pie spice in microwavable bowl or measuring cup. Microwave on HIGH 1-2 minutes or until warm, stirring once.
