All You Need
- 3 tbsp (45 mL) olive oil
- 3 cups (750 mL) each diced eggplant, green zucchini, Spanish onions and Roma tomato
- 1 1/2 cups (375 mL) each diced green bell peppers and red bell peppers
- 2 package (30 g) Club House Creamy Parmesan Chicken Penne Flavourful Recipe Mix
- 3 tbsp (45 mL) tomato paste
- 1 cup (250 mL) water
In a large heavy skillet, heat oil over medium high heat.
Add diced vegetables with the exception of the tomato and cook until tender.
Stir in Club House Creamy Parmesan & Sundried Tomato Chicken Penne Flavourful Recipe Mixes. Cook for 1 minute.
Add tomato paste, water and tomatoes and simmer, uncovered, stirring occasionally, until slightly thickened, about 15 minutes.
Tip: Use this recipe to make Vegetarian Lasagna. Half the recipe and serve as a side dish, or add cooked shrimp, sausage or ground beef to the recipe.
