All You Need
- 3 lbs (1 3/10 kg) whole chicken
- 4 tbsp (60 mL) Club House Piri Piri Signature Blend
- 1 tbsp (15 mL) vegetable oil
- 1 brick double wrapped in foil
Remove back bone from chicken and press down to flatten.
Rub seasoning all over chicken including under skin.
In oven safe heavy skillet over medium-high heat, add oil. Add chicken, breast side down. Brown for 1 minute.
Place foil wrapped brick on chicken. Bake at 450°F (230°C) for 25 minutes.
Remove from oven and remove brick. Carefully turn chicken over. Place brick back on top of chicken. Bake for a further 15 minutes or until internal temperature reaches 185°F (85°C).
