All You Need
- 1 tbsp (15 mL) olive oil
- 1 cup (250 mL) diced red onion
- 4 tbsp (60 mL) Club House Tuscan-Inspired Tomato & Herb Signature Blend
- 3 slices bacon, chopped (optional)
- 1 cup (250 mL) each diced fennel, carrot and celery
- 1 cup (250 mL) small dry pasta (eg. tubetti)
- 6 cups (1 1/2 L) water
- 4 cups (1 L) Kitchen Basics No Salt Added Vegetable Cooking Stock
- 1 can (540 mL) no salt added white kidney beans
- 1 can (796 mL) no salt added diced tomatoes in juice
- 2 tbsp (30 mL) grated parmesan cheese
In a large pot on medium-high heat, add oil and bacon; cook until bacon fat is melted and bacon is browned. Add onions and cook 2 minutes.
Add remaining ingredients except for cheese and bring to boil. Simmer 10 minutes.
Remove from heat, add parmesan and stir well before serving.
