All You Need
- 2 tbsp (30 mL) olive oil
- 1 cup (250 mL) each finely chopped onion and uncooked rice
- 4 tbsp (60 mL) Club House Parmesan & Herbs Signature Blend
- 2 cups (500 mL) sliced mushrooms
- 28 fl oz (840 mL) no salt added diced tomato
- 1/2 cup (125 mL) water
- 2 cups (500 mL) fresh spinach packed
In oven-safe skillet, over medium heat, add olive oil and onion. Sauté 5 minutes. Stir in remaining ingredients except spinach. Bring to a boil. Cover.
Bake at 375°F (190°C) for 20 minutes or until rice is tender.
Stir in spinach. Cover and let stand 5 minutes.
