Mushroom Shallot Gravy

A mix of cremini, shiitake and oyster mushrooms make for superior mushroom gravy.

All You Need

  • 4 tsp (20 mL) olive oil
  • 2 shallots, diced
  • 1 pkg (340 g/12 oz) mixed mushrooms, stems removed, cut into same size
  • 1 clove garlic, minced
  • 1/3 cup (75 mL) white wine or water
  • 1 pkg (25 g) Club House 25% Less Salt Brown Gravy Mix
  • 3/4 cup (175 mL) water
  • 1/3 cup (75 mL) whipping (35%) cream
  • 1/4 tsp (1 mL) Club House Black Peppercorn Grinder (coarsely ground)

Instructions

  1. Heat oil in large skillet over medium heat. Add shallots and cook, stirring until softened, 3 minutes. Stir in mushrooms and garlic, cook, stirring for 3 minutes.

  2. Stir in wine and cook until absorbed. Sprinkle in gravy, water, cream and bring to a boil. Reduce heat to medium-low and cook 1 minute. Stir in pepper.
