- 1 tbsp (15 mL) olive oil
- 1 medium onion
- 2 medium bell peppers
- 1 each small zucchini and eggplant
- 1 can (796 mL) diced Roma tomatoes
- 4 tbsp (60 mL) Club House Savoury Mediterranean with Flax Signature Seasoning
Heat oil in a large saucepan on medium-high heat. Add onion and peppers; sauté 2 minutes. Add zucchini and eggplant; sauté 3 minutes.
