All You Need

  • 1 tbsp (15 mL) olive oil
  • 1 medium onion
  • 2 medium bell peppers
  • 1 each small zucchini and eggplant
  • 1 can (796 mL) diced Roma tomatoes
  • 4 tbsp (60 mL) Club House Savoury Mediterranean with Flax Signature Seasoning


  1. Heat oil in a large saucepan on medium-high heat. Add onion and peppers; sauté 2 minutes. Add zucchini and eggplant; sauté 3 minutes.

  2. Stir in tomatoes and seasoning. Bring to boil and simmer until juice is reduced and vegetables are tender, about 15 minutes.
