All You Need
- 4 medium sweet potatoes
- 1 tbsp (15 mL) vegetable oil
- 3 tbsp (45 mL) Club House La Grille Jammin’ Jamaican Jerk Seasoning, divided
- 6 tbsp (90 mL) butter
- 1 tbsp (15 mL) brown sugar
- 1 cup (250 mL) Thai Kitchen coconut milk
Preheat grill to medium-high heat.
Prick sweet potatoes with a fork, coat with oil and sprinkle 2 tbsp (30 mL) seasoning evenly on top. Wrap in foil and place onto grill; cook for 40 minutes or until tender, turning periodically. Remove from heat and unwrap foil.
Cut sweet potatoes in half and scoop out flesh with a large spoon. Place in mixing bowl.
Add remaining ingredients and remaining 1 tbsp (15 mL) seasoning to potatoes and blend until smooth.
