Layered Shepherd’s Pie

All You Need

  • ½ lb (250 g) ground lamb
  • ½ lb (250 g) lean ground pork
  • 2 tsps (10 mL) vegetable oil
  • ¾ cup (175 mL) water
  • 1 pkg (47 g) Club House 25% Less Salt & Gluten-Free Shepherd’s Pie Seasoning Mix
  • 1 large onion, finely chopped
  • 2 cups (500 mL) frozen mixed vegetables
  • 2 cups (500 mL) each mashed sweet potatoes and mashed white potatoes

Instructions

  1. Preheat oven to 350°F (180°C).

  2. Heat oil in a medium saucepan on medium-high heat. Add ground meat and onion and sauté until meat is fully cooked. Remove excess fat.

  3. Combine seasoning mix and water. Add to pan with meat. Mix in frozen vegetables until well combined and heated through.

  4. Place half of the meat mixture in the bottom of a 2.5 qt (2.5 L) casserole dish. Cover meat with mashed sweet potatoes.

  5. Place remaining meat mixture on top of the sweet potato mash. Cover meat with mashed white potatoes.

  6. Bake in preheated oven for 35 to 40 minutes or until internal temperature reaches 165°F (74°C) and the top has started to brown.

  7. Tip: Use 1 lb (500 g) of your favourite ground meat in place of the pork and lamb mixture.

  8. Tip: To make mashed potatoes, peel and cube 3 medium potatoes. Place in medium pot, fill pot with water and boil until fork-tender, about 15 minutes. Drain, add 2 tbsp (30 mL) each milk and butter and mash with a potato masher or blend with a hand mixer. For a quick substitute, use instant mashed potatoes.

  9. Tip: To make mashed sweet potatoes, peel and cube 1 large sweet potato or 2 small sweet potatoes. Place in medium pot, fill pot with water and boil until fork-tender, about 15 minutes. Drain, add 2 tbsp (30 mL) each milk and butter and mash with a potato masher or blend with a hand mixer.
