Garlic Plus Tomato & White Bean Casserole

This vegetarian dish is bursting with fresh flavour and garlicky zip! Serve over rice or noodles for a complete meal.

All You Need

  • 1 tbsp (15 mL) olive oil
  • 2 cups (500 mL) each coarsely chopped onion and zucchini
  • 4 tbsp (60 mL) Club House Garlic Plus Signature Blend
  • 2 tbsp (30 mL) Club House Rice Flour
  • 1 can (796 mL) no salt added diced tomatoes
  • 1 can (570 mL) lima beans, drained and rinsed

Instructions

  1. In large skillet, over medium-high heat, add olive oil, onion and zucchini. Sauté 2 minutes.

  2. Add seasoning and rice flour.

  3. Stir in tomatoes and lima beans.

  4. Place in 8 cup (2 L) casserole dish. Bake at 375°F (190°C) for 35 minutes.
