All You Need
- 1/2 lb (250 g) pasta, any shape
- 1 english cucumber, chopped
- 1 large tomato, seeded, chopped
- 1/2 bell pepper, chopped
- 4 green onions, chopped
- Kalamata olives
- 1 cup (250 mL) full fat yogurt
- 1 dash salt
- 2 tsps (10 mL) olive oil
- 2 tsps (10 mL) lemon juice
- 1/3 cup (82 1/2 mL) Club House Greek Signature Blend
Cook pasta according to package directions. Drain and rinse until cold. Drain well.
In large bowl, combine cooked pasta, cucumber, tomato, bell pepper and green onions.
Instructions for preparing 1 1/3 cup Creamy Dressing. Mix together yogurt and salt. Place in sieve lined with double layer of cheesecloth (or large coffer filter). Let drain until 2 tbsp (30 mL) water (whey) has been collected, about 15 minutes. Discard whey.
In bowl, gently combine drained yogurt, olive oil, lemon juice and Club House Greek Signature Blend. Let stand 20 minutes before using
Toss pasta with Creamy Greek Salad Dressing and garnish with Kalamata olives.
