Cajun Beer Can Chicken

Club House Cajun Signature Blend brings the spice and the beer can method keeps the chicken juicy and tender. Try it on the grill!

All You Need

  • 1 chicken, 3-1/2 - 4 lbs (1.5 - 2 kg)
  • 3/10 cup (75 mL) Club House Cajun Signature Blend
  • 3 tbsp (45 mL) lemon juice
  • 1 can (12 oz/351 mL) beer

Instructions

  1. Rinse chicken; pat dry with paper towels.

  2. Combine Club House Cajun Signature Blend and lemon juice. Rub some of spice mixture inside cavity, then spread some evenly under the skin and some on the outside of the chicken.

  3. Open can and remove about an inch of beer however you wish. Pierce more holes in the top of the can. Stuff open end of chicken over the can. Set upright in large baking pan.

  4. Bake at 325°F (160°C) for 1-1/2 to 2 hours, or until tender or an internal temperature of 170°F is reached. Let stand 10 minutes before serving.

  6. · For optimum flavour, seasoned chicken can be covered and refrigerated overnight.

  7. · Chicken can also be done on a grill.
