Tabbouleh Salad

This staple Mediterranean dish packs a flavour punch with fresh chopped vegetables, salty feta cubes and a bright lemon-herb dressing. Great picnic fare!

All You Need

  • 1 cup (250 mL) fine bulgur
  • 1 cup (250 mL) boiling water
  • tomato, seeded and diced
  • 3/4 cup (187 1/2 mL) chopped, unpeeled English cucumber
  • 1/2 cup (125 mL) green pepper, chopped
  • carrot, peeled and grated
  • 1/4 cup (62 1/2 mL) Club House Lemon & Herbs Signature Blend
  • 1/4 cup (62 1/2 mL) olive oil
  • 3 tbsp (45 mL) lemon juice
  • 1 1/2 cups (375 mL) feta cheese, cubed

Instructions

  1. Cover bulgur with boiling water; let stand 20 minutes until grains are soft. Fluff with a fork. Stir in tomato, cucumber, green pepper and carrot. Whisk Club House Lemon & Herbs Signature Blend, olive oil and lemon juice together to blend. Stir into salad. Mix well. Gently stir in feta.
