Spanish Rice

The classic accompaniment to Mexican foods, this yellow-hued rice is loaded with flavour.

All You Need

  • 1 tbsp (15 mL) vegetable oil
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 cup (250 mL) long grain rice
  • 1 cup (250 mL) tomato juice
  • 1 cup (250 mL) water or chicken broth
  • 2 tbsp (30 mL) Club House Tex Mex Signature Blend

Instructions

  1. Heat vegetable oil in medium saucepan over medium-high heat.

  2. Add bell pepper and onion. Sauté 2 - 3 minutes.

  3. Stir in rice, tomato juice, water or broth and Club House Tex Mex Signature Blend. Bring to a boil.

  4. Stir and cover. Reduce heat to low and simmer for 20 to 25 minutes.

  5. Remove from heat and let stand, covered, for 5 minutes.
