Honey Vanilla Gelato

Gelato is the Italian answer to ice cream.  The Italians make gelato richly flavoured with an assortment of fruits, nuts, coffee, chocolate and vanilla.  It has a lower butterfat ratio than regular ice cream, so it has a unique freshness and lightness that is incomparable.  This honey vanilla gelato recipe picks up the sweetness of honey and the flavour of pure vanilla for a cooling summer treat.

All You Need

  • 5 egg yolks
  • 4 tbsp (60 mL) billy bee liquid honey
  • pinch of salt
  • 1 cup (250 mL) 2% milk
  • 2/3 cup (165 mL) 35% cream
  • 1 tsp (5 mL) Club House Pure Vanilla Extract


  1. Place egg yolks in small bowl and whisk together with billy bee liquid honey and salt.

  2. Combine milk and cream in medium saucepan. Bring to a boil over medium heat. Whisk some of the hot milk mixture into the egg yolk mixture to warm it.

  3. Then, slowly add the warmed egg mixture into the boiling milk and cream, whisking constantly.

  4. Remove from heat and stir in Club House Pure Vanilla Extract.

  5. Chill the gelato completely. Freeze in a gelato or ice cream maker according to the manufacturer’s instructions.

  6. Or place chilled gelato in metal bowl in freezer and whisk well every 1-2 hours, returning bowl to freezer each time, until frozen.
