Coconut Curry Sauce

All You Need

  • 1 tbsp (15 mL) vegetable oil
  • 3 tbsp (45 mL) diced onion
  • 3 tbsp (45 mL) Club House Roasted Cumin & Mint One Step Seasoning
  • 1 tbsp (15 mL) Club House Garlic Plus One Step Seasoning
  • 1 cup (250 mL) no salt added canned diced tomato with juice
  • 1 cup (250 mL) Thai Kitchen coconut milk
  • 1 cup (250 mL) Kitchen Basics No Salt Added Chicken Cooking Stock

Instructions

  1. In medium saucepan, heat oil over medium-high heat; sauté onions until translucent but do not brown.

  2. Add Club House Roasted Cumin & Mint One Step Seasoning and Club House Garlic Plus One Step Seasoning; stir.

  3. Add tomatoes, chicken stock and coconut milk; stir and bring to boil.

  4. Reduce heat and simmer 20 minutes, or until desired consistency.

  5. Chef’s Tip: Serve with Turkey Meatballs over rice.
