Chocolate and Orange Glaze

For use on 12 éclairs or 12 cream puffs or 1 12-in (30 cm) chocolate tart.

All You Need

  • 1/2 cup (125 mL) icing sugar
  • 1 tbsp (15 mL) water
  • 1/2 cup (125 mL) whipping (35%) cream
  • 1/2 cup (125 mL) chopped dark chocolate
  • 2 tsps (10 mL) Club House Pure Orange Extract


  1. In a saucepan, add icing sugar and water; bring to boil and allow to boil until mixture is caramel coloured.

  2. Remove from heat, add whipping cream and stir until smooth. CAUTION: the sugar mixture will be extremely hot.

  3. Add chocolate and stir until smooth.

  4. Add orange extract and stir to combine.

  5. Keep warm until ready for use.
