Carrot Ginger Bourbon-ade

This eclectic bourbon cocktail features sweet carrot juice, tart lemonade and a spicy bite from ginger beer and a ginger simple syrup.

All You Need

  • 1 tbsp (15 mL) Club House Ground Ginger
  • 1 cup (250 mL) water
  • 1/2 cup (125 mL) sugar
  • 3 oz (90 mL) carrot juice
  • 3 oz (90 mL) lemonade
  • 1 oz (30 mL) bourbon
  • 1 oz (30 mL) Ginger Simple Syrup
  • 8 oz (250 mL) cold ginger beer


  1. For the Ginger Simple Syrup, place ginger in centre of a piece of cheesecloth. Tie tightly with long piece of string. Place ginger sachet, water and sugar in small saucepan on medium heat. Bring to boil. Reduce heat to low; simmer 3 minutes, stirring to dissolve sugar. Remove from heat. Cool slightly. Refrigerate overnight to blend flavour. Remove sachet. Refrigerate spiced syrup, covered, in the refrigerator. (Makes 8 oz/250 mL)

  2. Fill cocktail shaker half full with ice. Add carrot juice, lemonade, bourbon and Ginger Simple Syrup; shake until well mixed and chilled. Strain into 4 ice-filled beverage glasses. Top each glass with 2 oz (60 mL) ginger beer. Serve immediately.
