Valentine Envelope Almond Cookies
These Valentine-inspired cookies are perfect for that special someone! The Valentine card look is the perfect surprise for your child’s class at school. Instead of using Club House Almond Extract in this recipe, feel free to try others such as Club House Pure Lemon, Imitation French Vanilla or Pure Mint & Peppermint Extract!

All You Need
- 2 1/4 cups (532 mL) all purpose flour
- 1 egg
- 1 cup (236 1/2 mL) icing sugar
- 1 tsp (5 mL) Club House Almond Extract
- 1 cup (236 1/2 mL) melted butter
- Cake Mate Scribblers
Combine flour and icing sugar in a medium bowl.
Stir in melted butter, egg, and almond extract until well blended. Shape into a ball in the bowl, then cover with plastic wrap and refrigerate for at least 2 hours.
Preheat oven to 350°F (180°C) and line baking sheets with parchment paper.
On a lightly floured surface, roll out your dough to a thickness of about ¼ inch. Cut into rectangles using a knife or a cookie cutter.
Bake 8-10 minutes, and then allow cookies to cool on the baking sheets for about 5 minutes before moving them to a wire rack to finishing cooling completely.
Using Cake Mate Scribblers, draw lines to create the look of envelope seams, adding a heart shape to serve as your envelope’s “seal.”
