French Vanilla Cupcakes
The rich flavour of French Vanilla takes these cupcakes to the next level! This recipe is a great cupcake base for any occasion — just customize your decorations!

All You Need
- Cake Mate Baking Cups
- 1/2 cup (125 mL) butter, softened
- 3/4 cup (175 mL) sugar
- 2 eggs
- 2 cup (500 mL) all-purpose flour
- 2 tsp (10 mL) baking powder
- 1/2 tsp (2 mL) salt
- 1 cup (250 mL) milk
- 1 tsp (5 mL) Club House Imitation French Vanilla Extract
- Cake Mate Cupcake Icing
- Cake Mate Décors or Cake Make Sugar Sprinkles
Preheat oven to 375°F (190°C) and line your muffin tins with 24 Cake Mate Easter themed baking cups.
Cream butter and sugar until light and fluffy, then beat eggs in one at a time.
Mix together flour, baking powder, and salt in a separate bowl, then add to the butter/sugar mixture, alternating with milk and beating to combine.
Stir in French vanilla extract.
Divide evenly into lined muffin tins and bake for 18 minutes, or until a toothpick inserted into the centre comes out clean.
Let cool in pans before decorating.
When cool, take a sharp knife and cut a cylinder in the top of each cupcake, but not all the way through. This is for your secret filling!
Pipe in your preferred colour of Cake Mate Cupcake Icing, alternating with layers of Cake Mate Décors or Sugar Sprinkles. Fill each hole completely before adding a swirl of icing to the top to hide the secret inside!
Serve with plenty of napkins – these can get messy!
