All You Need
- 3 large egg whites
- 1/3 cup (75 mL) sugar
- 2 tbsp (30 mL) Billy Bee Honey
- 2 cups (500 mL) shredded unsweetened coconut
- 1/2 tsp (2 mL) each pure vanilla extract, roasted ground ginger
- Zest and juice of ½ lime
Preheat oven to 350°F (180°C).
In a large bowl, beat together egg whites, sugar and honey until stiff peaks form.
In a second bowl, combine remaining ingredients and mix well.
Slowly add coconut mixture to whipped egg whites and fold together. Cover and refrigerate for 20 minutes.
Mold 1 tbsp (15 mL) of the mixture into balls and place on parchment lined baking sheet 1 inch (2 cm) apart.
Bake for 15 minutes. Remove from oven and let cool for 20 minutes. Store in air tight container.
