Lime and Coconut Macaroons

You put the lime in the coconut — and make a delicious treat with a tropical twist!

All You Need

  • 3 large egg whites
  • 1/3 cup (75 mL) sugar
  • 2 tbsp (30 mL) Billy Bee Honey
  • 2 cups (500 mL) shredded unsweetened coconut
  • 1/2 tsp (2 mL) each pure vanilla extract, roasted ground ginger
  • Zest and juice of ½ lime


  1. Preheat oven to 350°F (180°C).

  2. In a large bowl, beat together egg whites, sugar and honey until stiff peaks form.

  3. In a second bowl, combine remaining ingredients and mix well.

  4. Slowly add coconut mixture to whipped egg whites and fold together. Cover and refrigerate for 20 minutes.

  5. Mold 1 tbsp (15 mL) of the mixture into balls and place on parchment lined baking sheet 1 inch (2 cm) apart.

  6. Bake for 15 minutes. Remove from oven and let cool for 20 minutes. Store in air tight container.
